The excellence of ham in the northern area of Cordoba

The meadow at the north of the province of Cordoba is the perfect scenario and the best ecosystem for the Iberian pig to live freely and therefore produce calmly and softly the raw material to lead to one of the greatest gastronomic jewels known so far: the pure acorn-fed Iberian ham with Denomination of Origin Los Pedroches.

Alcaracejos, Añora, Belalcázar, Bélmez, Los Blázquez, Cardeña, Conquista, Dos Torres, Espiel, Fuente La Lancha, Fuente Obejuna, La Granjuela, El Guijo, Hinojosa del Duque, Pedroche, Peñarroya-Pueblonuevo, Pozoblanco, Santa Eufemia, Torrecampo, Valsequillo, Villanueva de Córdoba, Villanueva del Duque, Villanueva del Rey, Villaralto and El Viso, as well as the areas with a height superior to 300 metres of municipalities of Adamuz, Hornachuelos, Montoro, Obejo, Posadas, Villaharta and Villaviciosa, is the location of this DO.

All pieces, both hams and shoulders, endorsed by the protected denomination of origin Los Pedroches, go into the market being identified by this council through an unbreakable seal in which the category of the piece and an individual number for each one is specified.

The regulating council is committed to excellence and a top-quality product, in this case, pigs  of 100% Iberian race, as well as extensive farming in the meadow, and the ‘montanera’ feeding system, based on the acorn. This is what makes a difference between the production in Los Pedroches and other countries; the defence of a sustainable farming system, generating a landscape and products of high value.
The campaign of 2018 of the denomination of origin Los Pedroches has finished with  19,303 slaughtered pigs, a 27% higher than the previous year and 76,501 validated pieces during winter, both hams and shoulders.
